Ingredients

  • 4eggs, separated
  • 1/4 tsp.cream of tartar
  • 1/2 ripe avocado, mashed
  • Pinch salt
  • 2 tsp.toasted sesame seeds

Instructions

  1. Line a large baking sheet with parchment paper and preheat the oven to 300°. In a large bowl using a hand mixer, beat egg whites and cream of tartar until stiff peaks form.
  2. In a medium bowl using a hand mixer, mix avocado, egg yolks, and salt until smooth. Fold in egg whites and fold into avocado mixture until smooth. Place scant 1/4 cup mixture dollops onto baking tray, about an inch apart. Sprinkle with sesame seeds and bake until golden and firm, about 30 to 35 minutes.
